Friday night we decided to stay in and cook dinner. It has been cold here - well cold for SoCal - so we made grilled cheese sandwhiches and spicy blue cheese tomato soup. It was SO good! For the grilled cheese, we bought sharp cheddar, manchego, and gouda cheese - and then grilled them up in a cast-iron skillet. I added fresh tomato slices to mine because I like it that way!

For the tomato soup, we made Michael Symon's Spicy Blue Cheese Tomato Soup. It was sooo good! Personally I would only add 1 tablespoon of sriracha sauce, not two, because it was quite spicy!!! I also didn't put any beer into the recipe. Maybe that would have cut down the spice, but next time I will definitely try it. I also didn't add as much cream or blue cheese as the recipe called for because I was trying to make it a bit "healthier."
Ingredients
2 tablespoons olive oil
4 cloves sliced garlic
1 medium red onion diced
Season to taste
1 tablespoon picked oregano
1 28-ounce can San Marzano tomatoes
1 bottle light beer
¾ cup heavy cream
2 tablespoons sriracha sauce
½ cup buttermilk blue cheese
Directions
1. Heat the olive oil in a four-quart pot over medium heat.
2. When the oil is hot, add the onions and a three-fingered pinch of salt and sweat for two minutes. Add the garlic and continue to sweat for two more minutes.
3. Add the tomatoes and beer and bring to simmer.
4. Add the cream, sriracha sauce, and oregano and simmer for 45 minutes.
5. Use hand blender to blend soup in pot. Add the blue cheese and blend until smooth.
6. Serve!
Pre-blended... simmering and making the whole kitchen smell delicious!
Then Saturay night we headed over to Eagle Rock for my friend Kat's husband's birthday party. It was a beer tasting with beer from around the world. I sampled plenty of delicious beers, but I think I have found a new favorite.... Pyramid's Apricot Ale. Yummy!
We could only stay a few hours because we had to head over to Koreatown for another birthday and some karaoke Asian style! In case you've never been to this style of karaoke, you actually rent out a private room with your friends and sing your heart out!

Everyone had a blast including the birthday boy Zeus! It was 3am before we got home! I am getting too old to stay out that late! Ha, ha!

The soup sounds so good! Since I'm hearing we have another storm coming in (boo), I think I'm going to try to make this to warm up!
