My Spirited Kitchen

This post may make me sound like an alcoholic, but really I'm not! I love to cook and bake with alcohol - whiskey, rum, vodka, beer, wine, etc. The problem is, baking with alcohol can be tricky. I am going to start a new series about my adventures in the kitchen cooking with spirits!

First up... Bourbon Pecan Pie... yummy! This is my mom's recipe, and at Thanksgiving this year it was the favorite pie of the night!

The Usual Suspects

1/2 Cup of Sugar
1/2 Cup of Brown Sugar
1/2 Cup of Corn Syrup (I used light, but you can also you dark)
3 Large Eggs
3 Tablespoons of Butter (I like Salted Butter)
2 Cups of Pecans

The Not So Usual Suspect

3 Shots of Gentleman Jack

Mix the sugar, eggs, corn syrup together in a bowl

Melt the butter, then pour into the mixture

Add the pecans and mix together. Then pour into an empty pie shell.

Final product below.......

This is pre-baking. I couldn't help myself, and we dug into it before I could take a picture!

I also had this little lady helping me during the whole process....

She looks quite pathetic here, but she enjoyed herself - a little too much as I kept having to tell her "Off!"
